Cheesy Sloppy Joe Casserole is a warm, hearty twist on the classic sandwich, featuring seasoned ground beef in a tangy tomato-based sauce, layered with gooey cheese and a golden topping. It’s the perfect one-dish comfort food for family dinners, potlucks, or meal prep.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 1 lb ground beef (or turkey/chicken/lentils)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tbsp brown sugar (optional)
  • 1/4 tsp red pepper flakes (optional)
  • 1 1/2 cups shredded cheddar cheese (or mozzarella/Colby Jack blend)
  • 1 can refrigerated biscuit dough (or tater tots, crescent dough, or cornbread batter)
  • Salt and pepper to taste
  • Fresh parsley or chopped pickles for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté diced onions and bell peppers until softened, about 5 minutes. Add garlic and cook for another 30 seconds.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in ketchup, tomato paste, Worcestershire sauce, mustard, and brown sugar. Simmer for 5–10 minutes. Season with salt, pepper, and red pepper flakes.
  5. Transfer meat mixture to a greased 9×13-inch baking dish and spread evenly.
  6. Top with shredded cheese and your choice of biscuit dough, tater tots, or other topping.
  7. Bake uncovered for 20–25 minutes or until topping is golden and cheese is bubbly.
  8. Let casserole rest for 5–10 minutes before serving. Garnish with parsley or chopped pickles if desired.

Notes

  • Use freshly grated cheese for best melting quality.
  • Fully drain the meat to avoid soggy casserole texture.
  • This recipe is freezer-friendly before baking (leave off biscuit topping until ready to bake).
  • To reheat, warm in a 350°F oven for best texture; microwave is fine for individual portions.
  • Customize with mushrooms, corn, jalapeños, or different cheese blends.
