- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup buttermilk (or milk with 1 tbsp vinegar)
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water or hot coffee
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch or 9-inch cake pans with parchment paper.
- In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
- Alternate adding dry ingredients and buttermilk to the wet mixture. Mix just until combined. Add hot water/coffee last and mix briefly.
- Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.
Notes
- Add espresso powder to enhance the chocolate flavor.
- Use room temperature ingredients for better mixing.
- Don’t overmix the batter to keep the cake fluffy.
