Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk (or milk with 1 tbsp vinegar)
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch or 9-inch cake pans with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
  4. Alternate adding dry ingredients and buttermilk to the wet mixture. Mix just until combined. Add hot water/coffee last and mix briefly.
  5. Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.

Notes

  • Add espresso powder to enhance the chocolate flavor.
  • Use room temperature ingredients for better mixing.
  • Don’t overmix the batter to keep the cake fluffy.
