Garlic Butter Salmon & Asparagus is a delicious, nutritious, and quick meal made with tender salmon fillets and roasted asparagus, all drizzled in a rich garlic butter sauce.

Ingredients

  • 4 salmon fillets
  • 1 bunch of asparagus
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped (optional)
  • Olive oil (for cooking asparagus)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the asparagus and drizzle with olive oil, seasoning with salt and pepper. Roast in the oven for 12-15 minutes until tender.
  3. While the asparagus is roasting, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in lemon juice and cook for another minute.
  4. Season the salmon fillets with salt and pepper. Heat a skillet over medium-high heat, add a tablespoon of butter or olive oil, and sear the salmon for 4-5 minutes per side until golden brown. Alternatively, bake the salmon at 400°F (200°C) for 12-15 minutes.
  5. Once both the salmon and asparagus are cooked, plate the salmon and asparagus together, and drizzle the garlic butter sauce over the top. Garnish with fresh parsley if desired.

Notes

  • For crispy salmon skin, sear the skin side down first.
  • If you prefer a spicier version, add red pepper flakes to the garlic butter sauce.
  • Substitute the asparagus with green beans, broccoli, or Brussels sprouts if preferred.
